A week of good eats 4: Pancit Bihon

Pancit Bihon (pon-SEAT bee-HONE) is the go-to food for large parties here. It’s tasty, it’s a complete meal, it’s filling, and it’s cheap. Locally, you can have it delivered in a wide, shallow basket, often lined with banana leaves, all wrapped up and tied tight in place to survive the trip through traffic on the back of a motorcycle. Open it up, squirt with some calamansi (or limes) and you’ve got yourself a party.

When you try making it yourself, keep in mind that this is a great way to use up what you have. People make pancit with all kinds of meats and veg, so don’t feel like it won’t be “right” if you alter the recipe to what’s on hand.
